  1. Monkey Bread!! We made it for the first time today, and it will def hit the table either brunch christmas morning or late night snack christmas eve.

    PULL-APART (MONKEY) BREAD

    2 cups milk
    1/3 cup sugar
    1/2 cup shortening
    1/4 cup warm water
    1 pkg active dry yeast
    5 cups all purpose flour
    1/2 tsp. baking soda
    1/2 tsp. baking powder
    2 tsp. salt
    1/2 cup butter, melted

    Dissolve yeast in warm (not hot) water with a pinch of sugar and allow to sit for 5 minutes.
    Scald milk: Bring nearly to a boil, heating only until tiny bubbles begin to form around the edges of pan, around 190°F. Remove from heat. Stir in shortening and sugar until dissolved. Allow to cool to lukewarm (85°F).

    Stir in yeast mixture and 3 cups flour. Beat until smooth.

    Transfer dough to a bowl brushed with oil, turning once to coat dough with oil. Cover and let rise in a warm place for 2 or 3 hours.

    Add remaining ingredients except for the butter. Knead 4-5 minutes. Allow the dough to rise for another hour.

    Preheat oven to 350°F.

    Melt 1/2 cup butter and allow to cool slightly. 1 tablespoon sugar may optionally be added to the butter for a little extra sweetness, if desired.

    Dust a work surface well with flour. Turn dough out and roll into 1 1/2" to 2" diameter balls. Dip the dough balls into the slightly cooled, melted butter.

    Arrange in layers in a Bundt pan, tube, or monkey bread pan.

    Bake in preheated oven for 45-55 minutes. Cool 5 minutes, Run a blunt knife along edges of bread to free it from the pan. Remove, upside-down, from pan onto serving dish.

    The bread may be served either sliced or pulled apart. Best served while still warm from oven.

  5. We always bake Toll house Cookies for the holidays!


    Ingredients

    * 2 1/4 cups all-purpose flour
    * 1 teaspoon baking soda
    * 1 teaspoon salt
    * 1 cup (2 sticks) butter, softened
    * 3/4 cup granulated sugar
    * 3/4 cup packed brown sugar
    * 1 teaspoon vanilla extract
    * 2 large eggs
    * 2 cups (12-oz. pkg.) NESTLÉ® TOLL HOUSE® Semi-Sweet Chocolate Morsels
    * 1 cup chopped nuts


    Directions

    PREHEAT oven to 375° F.

    COMBINE flour, baking soda and salt in small bowl. Beat butter, granulated sugar, brown sugar and vanilla extract in large mixer bowl until creamy. Add eggs, one at a time, beating well after each addition. Gradually beat in flour mixture. Stir in morsels and nuts. Drop by rounded tablespoon onto ungreased baking sheets.

    BAKE for 9 to 11 minutes or until golden brown. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely.

  7. How to make Mince Pies:

    What you need to do first is buy a jar of mincemeat, which is basically a rich fruit filling. I can usually find it at the supermarket - it's expensive in America, usually around $6 a jar (ouch), but it wouldn't be Christmas without mince pies so it's worth it!

    Then you make a pie crust and cut small circles out of it with a biscuit cutter. Place one round into a cupcake pan, fill it with a dollop of mincemeat, and cover with another pastry round. Poke a few holes in the top with a fork, and bake until lightly browned - I would cook it at about 350 degrees for around 20 minutes. I don't have an "official" recipe so I'm estimating here. My oven is broken, so these days I just try to pull things out before they start smoking. ;)

    Let the pies cool, and then cover with sifted confectioner's sugar.
    This is my favorite pastry recipe that I swear by - I always get rave reviews on it, and no one can believe that it's made from oil and not butter:

    Recipe from Betty Crocker's Cook Book - makes an 8 or 9 inch one-crust pie

    Ingredients:

    1 cup plus 2 tablespoons all-purpose flour
    1/2 teaspoon salt (I always omit this)
    1/3 cup salad oil
    2 to 3 tablespoons cold water

    Measure flour and salt into bowl. Add oil; mix until particles are the size of small peas. Sprinkle in water, 1 tablespoon at a time, mixing until flour is moistened and dough almost cleans side of bowl. (If dough seems dry, 1 to 2 tablespoons oil can be added. Do not add water.) Gather dough together; press firmly into ball. Shape dough into flattened round and roll out.

  10. Pumpkin Bread
    3 1/2 cups flour
    2 teaspoons baking soda
    1 teaspoon salt
    1 teaspoon cinnamon
    1 teaspoon nutmeg
    3 cups sugar
    1 cup oil
    4 eggs
    2 cups canned pumpkin

    1. Preheat oven to 350 degrees.
    2. Mix all ingredients.
    3. Pour into two greased bread pans.
    4. Bake for one hour.
    My mom adds dates but I like to do choclate chips and put them in muffin tins.

    Peppermint Swirls - Part 1

    1 C. softened butter
    1/3 C. powdered sugar
    1 tsp. Vanilla
    2 C. flour
    1/4 tsp. peppermint extract
    1/4 tsp. red food coloring
    2 T. granulated sugar

    Heat oven to 350 F
    In large bowl, beat butter, powdered sugar, and vanilla on medium speed or mix with a spoon. Stir in flour. Divide dough in half. Stir peppermint extract and food coloring into one half. Divide each color of dough in half again so now you have it in fourths- two fourths uncolored and unflavored, and the other two fourths with coloring and flavoring.

  16. Peppermint Swirls - Part 2

    On a floured surface, make 1 ball of each color into a 12 inch long rope. Twist one red and one white rope together.

    Do the same with the other red piece and white piece of dough.

    Cut twisted ropes into 1/2 inch slices and shape each slice into a ball.

    Place balls about 1 inch apart on ungreased cookie sheet and flatten to about 1/4" thick. Use a drinking glass with a flat bottom to do this- grease the bottom and dip it in sugar before flattening cookies.

    Bake 7 - 9 minutes or until set. Remove to cooling rack.

  27. No-Bake Cookies

    1 cube Butter/Margarine
    3 Tblsp Cocoa
    1/2 cup Milk
    1 tsp Vanilla
    2 cups sugar

    Combine the above ingredients in a large saucepan and bring to a boil. Let the mixture boil 2 -5 minutes while stirring. Remove from heat and add:

    1/2 cup Peanut Butter
    3 Cups Oatmeal

    Drop by spoonfuls on a sheet of waxed paper. Chill. Store in tightly sealed container!

    Step 1

    Spray your cookie sheet lightly with the cooking spray and set aside.

    Step 2

    Mix granulated sugar, corn syrup, and water in the sauce pan. Attach candy thermometer to the side of the sauce pan so that the bottom tip is submerged in the mixture but not touching the bottom of the pot. Stir until all of the sugar is dissolved.

    Step 3

    Stop stirring when all of the sugar is dissolved and bring mixture to a boil. DO NOT STIR at this point! Watch the candy thermometer and remove the sauce pan from heat immediately when the thermometer reaches 300 degrees Fahrenheit (the temperature will continue to rise a bit after pan is removed from heat source - this is normal).

    Step 4

    Allow mixture to stop bubbling. Add food coloring and stir with metal spoon to achieve desired color (this is optional). Use caution when adding the food coloring--it will immediately release steam when coming in contact with the heated sugar mixture.

    In this step you will add the Cinnamon Oil.

    Take great caution with this step! You may want to open windows and have the sauce pan lid on hand to avert the very strong fumes and steam. Keep your head away from the open sauce pan.

    Carefully pour the dram of cinnamon oil into the sauce pan. Allow the steam from the oil to dissipate. Gently stir while still keeping your head (eyes and nose especially) away from the open pan. More steam and strong cinnamon fumes will release while you are stirring.

    Step 6

    Carefully pour the mixture onto your cookie sheet with a back and forth motion. The mixture should be about 1/8" to 1/4" thick.

    Step 7

    While the candy is still malleable, you can score it into small squares (or shape of your choosing) using a pizza cutter sprayed with cooking spray. Wait until the candy is completely hard and break apart. Dust with Confectioner's sugar.

    Ingredients

    * 3 cups sugar
    * 1 cup vegetable oil
    * 4 eggs
    * 2/3 cup water
    * 1 (15 ounce) can pumpkin puree
    * 2 teaspoons ground ginger
    * 1 teaspoon ground allspice
    * 1 teaspoon ground cinnamon
    * 1 teaspoon ground cloves
    * 3 1/2 cups all-purpose flour
    * 2 teaspoons baking soda
    * 1 1/2 teaspoons salt
    * 1/2 teaspoon baking powder

    1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease two 9x5 inch loaf pans.
    2. In a large mixing, combine sugar, oil and eggs; beat until smooth. Add water and beat until well blended. Stir in pumpkin, ginger, allspice cinnamon, and clove.
    3. In medium bowl, combine flour, soda, salt, and baking powder. Add dry ingredients to pumpkin mixture and blend just until all ingredients are mixed. Divide batter between prepared pans.
    4. Bake in preheated oven until toothpick comes out clean, about 1 hour.
